Loukaniko is a traditional Greek sausage. Andrew's recipe is an edible heirloom from his families rich Cretan history. This recipe originates from the mountainous regions of Rethymno, where indigenous herbs grow abundantly. Villagers would use these wild herbs to season their sausages before smoking them over an open fire. Andrew's Loukanika are made using the finest Australian pork and is flavoured with an authentic blend of wild herbs. Loukanika are naturally smoked so are ready to heat and eat. They can be barbequed or sliced and fried before being finished with a squeeze of fresh lemon; then paired with other traditional delicacies like apaki and saganaki as a mezze - don't forget the ouzo OPA!
